This handwritten cookbook was created by Ellen Poulsen in the 1950's from a collection of family recipes by her mother, Marie Poulsen. Marie lived on the island of Fyn in Denmark from 1906-1995 and was a renowned pastry chef for a number of years in her younger days at the Glamsbjerg Hotel. When Ellen left Denmark as a young girl to work in England, she often came home to visit. Ellen decided it was important to preserve all the wonderful recipes her mother had created and wrote them down in her own handwriting with an extensive list in the Table of Contents. She also included some other favorites from local newspaper articles. These recipes include both old and still popular dishes from that time era, many of which are still favorites today.
