Jules Gouffe est ne en 1807 et mort a Neuilly-sur-Seine en 1877. Grand cuisinier, il fut un patissier hors pair et fut remarque par Antonin Careme. Il s elevera comme cuisiner aupres de Napoleon III et -officier de bouche- au Jockey Club sur l avis d Alexandre Dumas et du Baron Brisse.
